Old Fashioned apples stack cake

This was my granny’s recipe and folks use to keep their recipes to themselves but this is too good not to share ...... 

everyone should have the opportunity to try my granny’s apple stack cake. 

ENJOY 


Dried apple filling-

I use 2 bags of dried tart apples for my filling 

 1 1/2 cups sugar

 1 1/2 cups brown sugar 

1 1/2 tsp cinnamon 

1 1/2 tsp nutmeg 

1/4 tsp cloves 

1/2 tsp salt 

I start with 1 tsp of the seasonings and then season to taste….. clove is really strong so I wouldn’t recommend adding any of it.

Fill pot with water to about half the apple are covered…..cook till tender. Mash with a hand masher and pretty throughly and add sugars and spices. Let cool till just warm. 

 

Cake layers- 

1 cup shortening

2 1/2 cups sugar

2 eggs

2 tsp vanilla

1 tsp baking powder

1 tsp soda

1/2 cup buttermilk

4 cups plain flour

1 tsp salt

1 tsp allspice 

1 tsp nutmeg 


Beat together shortening and sugar. 

Add eggs and vanilla; beat well. Combine baking powder, soda, and buttermilk in a small bowl. 

Stir and add to creamed mixture. Stir again. Sift together flour, salt, allspice, and nutmeg. 

Add the flour mixture till you have a stiff dough. Divide into 12 portions rolling thin into a circle. 

I cook my cake layers in a cast iron skillet .... and I use parchment paper cut into 9in circles to size my dough. Bakes at 425 for 10 min. 


Remove and let cool completely before icing and stacking your layers. Some people do not ice the whole outside also but I do. You must keep this cake in the refrigerator or the apples will mold quickly. 

Let sit for 24 hours in fridge before slicing.
