INGREDIENTS:
5 lb bag of apples (20 small, 15 medium or 10 large)
1/2 cup water
1/2 cup brown sugar
1/2 c granulated sugar
2 tsp. cinnamon
1/4 tsp. clove
1/2 tsp. Nutmeg
HOW TO MAKE:
Peel and cut the apples into slices, put them in a large 6-liter saucepan. (A mixture of two or more apples such as Fuji, Gala, Red Delicious, or Honey Crisp gives a more complex flavor)
Mix the water, brown sugar, granulated sugar, cinnamon, cloves and nutmeg and then sprinkle it all over the apples.
Simmer on low heat for 8-10 hours, stirring occasionally. For really smooth and creamy apple butter, process it with an immersion blender until well blended after the cooking time is up and cool slightly.
Place spoon into clean mason jars with ajar lid, and leave to cool completely and thicken. Then close with the lid and refrigerate for up to 2 weeks or freeze for up to 6 months.
Jeff notes:
- What do you do with apple butter you ask? You can do the following:
Spread it on toast.
Stir it with oatmeal or ice cream.
Top with pancakes, waffles, or French toast.
Use it in place of pumpkin or apple juice in recipes.
Put a bowl with the cheese plate.
Stir it into muffins or muffins.
Rub it on chicken or pork during the last few minutes of cooking
