These fried meatballs have the natural sweetness of the meat and from the shallots. You can snack on them without further cooking with sauce. I only used 12 fried meatballs for this dish.
Ingredients For The Meatballs
[makes about 25 'ping pong size' meatballs]
350-400 gm minced meat with some fats
40 gm shallots - peeled and chopped
3-4 cloves garlic - peeled and chopped
1 small egg
30 gm cornstarch
Seasoning
1 tsp salt to taste
1 tsp ground white pepper
Ingredients For Sweet and Sour Sauce
12 fried meatballs
1 yellow onion - peeled and cut wedges
1 tomato - cut wedges
1 red chilli - seeded and cut into pieces
some spring onions - cut sections
3 tbsp tomato sauce
2 tbsp sweet chilli sauce
2 tsp sugar
1/2 bowl water
1 tsp cornstarch
• Place minced pork meat in a mixing bowl, add in salt and pepper. Mix in a same direction several times, then add in chopped shallots and garlic. Mix again in same direction several times to combine. Add in 1 small egg, continue to mix in one direction until the egg is well absorbed in the meat. Lastly, add in cornstarch, again mix in a same direction for another 5-10 minutes into a thick paste. Leave in the fridge while you prepare the other ingredients.
• Combine the sauce ingredients in a bowl, set aside. Cut the onions, tomato, chilli and spring onions.
• Remove the meat mixture from fridge. Shape into 'ping pong' size meatballs. Place on a tray.
• Heat enough oil for frying the meatballs in a saucepan or wok. Fry in batches until golden brown and cooked. Dish up. Serve hot with chilli sauce [if not cooking further].
• To Cook Fried Meatballs in Sweet & Sour Sauce - Heat some oil in wok, saute onions, chilli and tomatoes for a minute or so, pour in sauce and add in fried meatballs. Stir fry to mix all ingredients and until sauce is thick and boiled. Add in spring onions and mix.
